About Pearl Oyster Bar:

Not only did Charles reinvent Maine’s signature sandwich, she mastered other seaside staples – and she attracted many New Yorkers and NYC visitors into Pearl Oyster Bar’s doors who delighted in the idea of such a new type of cuisine. At Pearl Oyster Bar near our Central Park Hotel, dine on traditional comfort foods made in a style that only a trained chef can offer.

Dishes that you may think ordinary find new life at Pearl Oyster Bar – like fried oysters, pan roasts, chowders, and even blueberry crumble pie. Chef Charles has elevated what some might think to be “quick food” or even snack food. In Pearl Oyster Bar, Charles presents an upscale lobster shack that is proving to be a forerunner for an international trend in restaurants.

Chef Charles’ family has summered on Gooch’s Beach in Kennebunk since 1917. They believe that New England seafood is not a trend, but a treasured part of history for many. Chef Charles named her immediately-popular NYC Restaurant after her opera-singing grandmother, Rebecca “Pearle” Goldsmith, and she continues to keep it running as a salute to those summers with close family.
