In Pearl Oyster Bar, Charles presents an upscale lobster shack that is proving to be a forerunner for an international trend in restaurants.
Chef Charles’ family has summered on Gooch’s Beach in Kennebunk since 1917. They believe that New England seafood is not a trend, but a treasured part of history for many. Chef Charles named her immediately-popular NYC Restaurant after her opera-singing grandmother, Rebecca “Pearle” Goldsmith, and she continues to keep it running as a salute to those summers with close family.
